Macaroni and Cheese Mini-Muffins! These make a fun appetizer or snack 😋

-1 box @eatbanza chickpea pasta
– 1 bag @wegmans shredded Mexican cheese (can also sub in a vegan/dairy free cheese if you’d like!)
-Preheat oven to 350F and lightly grease a mini muffin tin (or use a silicon mold one)
-Cook the @eatbanza chickpea pasta on the stove for 7 minutes, then strain it.
-Pour the pasta back into the pot and stir in the cheese
– Spoon the mac n cheese into the mini muffin tins and bake for 20 minutes (I made 30 mini muffins)
– allow time to chill & ENJOY!
*** I personally found I preferred these after they’d been in the fridge overnight 😋 ***
