    4-ingredient Gluten-Free Protein Pumpkin Bread

    This bread is full of pumpkin flavor, but you only need 4 ingredients!  The macros for the whole mini-loaf: 39p 39c 4f (356kcal)… I sliced mine into 8 slices so each slice was 5p 5c .5f (44kcal) 



    RECIPE:

    1. preheat the oven to 400F and grease a mini loaf pan or 3-4muffin tin slots
    2. mix the following ingredients together in a bowl:
      • 2 large egg whites (about 66grams)
      • 1 container (150grams) of @lightandfit 0% vanilla greek yogurt (or any Greek yo)
      • 28grams (4TBSP) coconut flour
      • 40 grams of @pamcakespancakes pumpkin spice pancake mix (use code UPLIFT for a 10% discount)
      • (optional: add pumpkin spice seasoning and cinnamon)
    3. Bake for 24-30minutes until edges are golden brown
    4. Slice
    5. optional: top with some PB

      1. Hi Eryn, You can sub in protein powder to make a protein bread! I would also add a tsp of baking powder too.
