    Cherry Protein Muffins – Gluten free, 5-ingredients, 100kcals each

    Cherry Protein Muffins — macros per muffin: 9p 11c 2f (100kcal) these are really easy to make and pair well with almond butter!

    RECIPE:

    Recipe makes 4 muffins

    Directions :

    1. preheat oven to 350,
    2. mix together the following:
      • 2 egg whites (66grams-ish),
      • 28grams (4tbsp) @anthonysgoodsCoconut flour,
      • 37grams (1scoop) @pamcakespancakes gluten free buttermilk or white chocolate chip protein pancake mix (code UPLIFT saves you 10%),
      • 1 container (150g) of cherry @lightandfit Greek 0% yogurt,
    3. once mixed, add batter to 4 muffin slots,
      • chop up 8 cherries (i used @wegmansfarm ), & add them to batter equally (2 cherries per muffin)
    4. bake for 25ish minutes until done (check at 20min & assess… mine baked for 27min)

    Substitution: if you don’t have a protein pancake mix, you can use 37g of Quest or PES protein powder + 1tsp baking powder & it will work (macros will be different)
